We consider a great recipe one that is healthy with little to no compromise, tasty, and easy to prepare. This easy guacamole recipe easily meets all three criteria.
Ingredients
- 2 avocados
- 1/4 of a red onion
- 1.5 oz lemon juice
- 4 celery stalks
The nutrition label for this recipe represents one of four total servings.
Instructions
- Cut the celery stalks into 2-3” segments
- Dice or mince the red onion and put into a glass bowl.
- Cut and peel the avocados and put them in the bowl.
- Pour the lemon juice into the bowl.
- Mash the contents of the bowl with a fork or mashing utensil.
- Add salt and pepper to taste (not included in nutrition label).
Notes
Avocados are an excellent source of nutrition, particularly potassium, which can be difficult to meet the recommended intake for. Although avocados are high in fat, the fat is predominantly monounsaturated, which is the healthiest form. The onions add flavor while further enhancing the nutritional quality. The celery also enhances the nutritional quality and is a much healthier option for dipping than chips.
